"Ono" means delicious in Hawaiian, and that's exactly what the fried rice in Hawaii tastes like!! Essentially, fried rice is a dish you can make with "whatevas." Got leftovers? Make fried rice! There's really no limit to what you can create. As Uncle Bobby says,

"Get steak fried rice, pork fried rice, shrimp fried rice, smoke meat fried rice, kim chee fried rice, char siu fried rice, ahi fried rice, da junk kine fried rice dat only get peas an' carrot inside..."

Okay- thank you, Uncle Bobby (we better stop him there or you'll be reading forever.) Island-style fried rice can be made with just about anything. As long as you have the essential components, you can make a batch that rocks your taste buds! Feel free to tweak this recipe to match whatever your tummy craves (or whatever you can find in the fridge, lol!)

What You Will Need...

To give your fried rice the "island-style" feel, you will need four important items; Cooked white rice, shoyu (soy sauce), oyster sauce, and seasame oil. After that, the rest it up to you!

My version of island-style fried rice is dedicated to meat lovers. Here's how to make it:

Ingredients:

*4 cups Cooked white rice

*2 tbs. Sesame oil

*3 tbs. Shoyu

*3 tbs. Oyster Sauce

*2 large Portuguese Sausage

*1 lb. bacon

*4 Eggs

*3 tbs. green onion or chives

* Black pepper (to taste)


Helpful hint: If you don't like the strong flavor of oyster sauce, you can nix it altogether. Just use more shoyu instead ;)

Directions:

  1. Chop up bacon and sausage into bite-sized pieces.
  2. Pan fry bacon and sausage.
  3. Drain & set aside.
  4. Scramble eggs (season to taste, if desired.)
  5. Cook scrambled eggs, breaking apart in to bite-sized pieces.
  6. Set cooked eggs aside.
  7. Chop up green onion/chives & set aside.
  8. Pour sesame oil into wok/pot.
  9. Keep burner on a medium-low setting.
  10. Add cooked white rice to wok/pot.
  11. Add shoyu and oyster sauce.
  12. Mix rice until it is evenly coated.
  13. Add black pepper (to taste) and mix again.
  14. Pour in cooked bacon & sausage, scrambled eggs, and green onion/chives.
  15. Mix until all ingredients have been evenly distributed.
  16. TA-DAH!!! You're all done!!

Some Great Variations:

  • My dad likes to use a mixture of jasmine rice and brown rice (instead of white), and he prefers using rice that is a day old. To give it a little kick, he also adds a chopped Hawaiian chili pepper (or three- lol!)
  • Veggies are also taste great in fried rice. Try using fresh green beans, peas, carrots, broccoli, zucchini, or tomato.
  • Most restaurants in Hawaii use Spam in their fried rice recipes.

Fried Rice Breakfast

Now that you're done making your very own island-style fried rice, what are you going to do with it? I'm going to indulge in a fried rice breakfast...it's DA BOMB!! What is it, you ask?

Two eggs (over-easy) and your choice of breakfast meat served on a bed of homemade island-style fried rice. Can you say...ONO??!!

kerlynb- Here in Hawaii, it's rare to find a plate that doesn't have rice on it ;) Some people even wrap the fried rice in cooked eggs to create an omelet-type dish! I wish you the best in your rice-cooking adventures!
